Emmanuelle Pasquier, the right touch of terroir
At the heart of the brigade, Emmanuelle Pasquier creates a cuisine of meaning and memory. Co-owner of the estate, she joined the château’s kitchens in 1988, after graduating from hotel management school. As much a chef by heart as by profession, she draws her inspiration from Touraine’s terroir, from the produce grown in the kitchen garden and from traditional methods. Her starters speak of nature at work, and her cuisine exudes fidelity to the seasons and proximity to local producers. Nothing is ostentatious; everything is designed to sublimate the raw flavor. Among her signature dishes, homemade foie gras with jamón ibérico and langoustines with curry bear witness to a refined, powerful yet subtle style. Emmanuelle isn’t looking for effect. Franck Joly, pastry chef for over thirty years, has developed a luminous, unpretentious style. At his place, fruit speaks for itself, textures interact and sweets are harmonized without heaviness. Château de Rochecotte is located in the heart of the Loire Valley, 35 minutes from Tours and Saumur, a few kilometers from Azay-le-Rideau and at the gateway to the Saint-Nicolas-de-Bourgueil wine route. An ideal location for a gastronomic break between visits to châteaux and vineyards.

From Paris or Bordeaux, take the A10 freeway to Tours, then the A85 towards Saumur, exit 7 at Langeais.
